At a customer a requirement came not to enable wiki page libraries (yet) for WSS teamsites. So like I did with customizing the SiteSettings feature , I looked in the FEATURES folder to find where the wiki library was located and 'just' uninstalled the feature. For your information, the feature that covers the wiki library is called "WebPage Library (little odd though)..
